just wanted to share my recipe for a nice coleslaw that takes about ten minutes or less to make

for a large bowl, i used...
2-3 carrots (grated)
a large chunk of white cabbage (chopped finely)
some red cabbage (chopped finely)
3 radishes (chopped into chunks)
3 large garlic cloves (chopped finely)
1 hot chilli
half a white onion (chopped into chunks)
half a red onion (chopped into chunks)
some vegan mayonnaise
white pepper
then i like to add some fresh or dried herbs, usually thyme but use whatever you like
then i put it in the fridge for a few hours or overnight so the garlic, herbs and chilli flavours really go through it.
i've made this a few times now, and it's always a really nice side dish to any meal or in a sandwich.
almost raw except for the vegan mayonnaise i suppose, but i'm sure you could maybe use tahini or something instead? any other suggestions would be great actually.
once i added some chopped vegan cheese too but this is of course optional.
yum... just finished a batch with some new vegan mayo i found tonight which is soy-free, made from pea protein. can't wait to try it with my dinner...
